Flinders Ranges B&B Accommodation, SA
As a busy Mum of three I’m always looking for quick and easy recipes that: 1. take minimal time, 2. make minimal mess and 3. use minimal ingredients! Oh and of course most importantly recipes that the kids will love!!! Apricot balls are quick and easy and can be made ahead of time and kept in the fridge, perfect for your next party!
INGREDIENTS
1 pkt of diced dried apricots
1 cup of coconut
Extra coconut for rolling balls in
1/2 pkt of Nice biscuits crushed (the kids like this bit as they can crush half and eat half!)
1 tin of light condensed milk
METHOD:
1. Put all ingredients into a bowl and mix together (see I told you this was simple!). If mixture is too sticky add a little more coconut. You want the mixture a little sticky so that the coconut can stick to it in the next step but firm enough that it can be rolled into balls in your hands.
2. Get a dessert spoonful of mixture and roll into a ball.
3. Put the extra coconut onto a plate. Drop the ball into the coconut to coat. Repeat until all mixture is used.
4. Put in the fridge to set.
Enjoy!
P.S. This is also a great recipe to get the kids involved in. From experience I’ve learnt that they tend to eat the things they have had a hand in making! This mixture can easily be doubled, tripled etc. for the larger catering jobs!

I do a similar recipe Lisa, instead of rolling mixture into balls, press it into a pan & refrigerate until set, then place melted chocolate over slice and set. It is very yummy. I have to hide it from George otherwise we wouldn’t get any.
