My Cheese Puff Recipe that you can't say no to!

I’m the first to admit that I have a pastry problem ;-) but I’m pretty confident that there wont be too many of you out there that could resist these little beauties! And what’s even better, they are super simple too…

Ingredients

  • 100gm Philly Cream Cheese (I prefer the light variety, makes me feel better about the pastry!)
  • A good heaped Tbspn of Seeded Mustard
  • 1 cup of grated Tasty Cheese
  • 1/2 cup of grated Parmesan
  • 2 Tbspn of chopped Parsley
  • 3 Rashers of Bacon diced and fried in small amount of butter. You can substitute the bacon with diced Salami which is also very nice.
  • Salt & Cracked Pepper.
  • Sheets of Puff Pastry, probably about 6, thawed until cool (don’t let get warm or it’s becomes hard to work with).
  • Egg Wash (1 egg beaten with a little milk)

Method

  1. Pre-heat oven to about 220°C.
  2. Really all you have to do is mix all ingredients together in a bowl!
  3. Prepare your puff pastry for filling. I prefer to make a croissant shape but you can make any shape you like providing it creates a sealed parcel around the filling. To make the croissant shape cut your puff pastry square into two even rectangles and then diagonally, as in picture below, to create 4 triangles:
  4. Place filling at the fat end of each triangle and roll up from big end to small. Press sides of pastry together to seal in filling during cooking.
  5. Place on a tray and brush with egg wash (lining tray with Glad Bake helps to prevent messy washing up later!)
  6. Cook until golden crispy brown. Usually about 20 minutes, can turn heat down to 190°C if it looks like they are starting to burn.
